    List of Ingredients




    2 c chicken (cooked, cubed)
    1/2 c onion, finely chopped
    1/2 c crushed pineapple, drained
    1/2 c apple (not peeled) cubed
    3/4 c red or green grapes (seedless) halved and quartered
    1/4 c shredded carrot
    3/4 c real mayonnaise
    1/2 c finely chopped nuts

    When cooking chicken for chicken salad put in a small onion, 1 rib of celery, some parsley, 1 or 2 carrots and salt. When chicken is tender, lift out and let cool. Strain broth and you have excellent chicken soup. Mix all salad ingredients. If salad appears dry add mayonnaise or some of the drained pineapple juice.
