    Cotton Pickin' Salad

    I located this great recipe in the Junior League of Springfield, Missouri. "Sassafras!"

    List of Ingredients




    2 16 ounce cans black-eyed peas -- drained
    4 strips bacon -- fried crisp and crumbled
    2 hard-cooked eggs -- chopped
    1/2 cup onion -- chopped
    2 teaspoons chopped pimento
    3/4 teaspoon salt
    1/4 teaspoon pepper
    1/4 cup vegetable oil
    2 tablespoons mayonnaise
    1 tablespoon lemon juice
    1 1/2 teaspoons liquid smoke
    1 teaspoon Worcestershire sauce
    1/4 teaspoon Tabasco sauce

    Combine peas, bacon, eggs, onion, pimento, salt and pepper.
    Thoroughly mix remaining ingredients.
    Pour over pea mixture and stir well.
    Cover and refrigerate.
    Serve well chilled.
    Serves 6 to 8
