    Green Chili Potato Salad

    2 lbs. potatoes, new red or Yukon Gold, well washed
    1/2 c. mayonnaise
    2 scallions, chopped
    2 Tbsp. fresh cilantro, chopped
    4 Tbsp. roasted green chilies, coarsely chopped
    Salt and freshly ground pepper, to taste

    Bring a large pot of water to a boil and cook the potatoes until fork tender. Drain the potatoes and plunge into ice water to stop the cooking. Fold in remaining ingredients and season to taste with salt and pepper.
