    Anita's Gumbo

    1-2 lbs chicken
    2 lbs Eckrich farm smoked sausages
    12 cups chicken broth
    water to cover chicken
    1 package Creole gumbo mix
    1-2 small onions
    1/4 cup parsley
    2 can (16 oz) okra gumbo
    2 can (16 oz) corn
    1 box rice (wild pecan or instant)

    Add 1 or 2 packages of the Creole Gumbo Mix to Large Pot of Cold Water
    before you put the chicken in it to cook.

    Place chicken in the Pot with the cold water and gumbo mix and cook until
    done.
    De-bone cooked and cooled chicken and cut up in little pieces and put back
    in the broth that was left in the pot after boiling.

    Cut up the smoked sausage in small bite size pieces and add to pot.
    Add all other ingredients and cook on low to medium for an hour or less
    depending on how fast you want it ready.

    May need to add more water, depending on how soupy or thick you want the
    gumbo.

    Can also be made in the crock pot and cook on low for 8-10 hours.
