    From: Mrs Fields "Best Cookie Book Ever!" Time-Life Books

    List of Ingredients




    CREAMY LEMON MACADAMIA COOKIES

    2 cups all purpose flour
    1 tsp baking soda
    1/4 tsp salt
    1 cup firmly packed light-brown sugar
    1/2 cup granulated sugar
    1/2 cup (1 stick) salted butter, softened
    4 oz cream cheese, softened
    1 large egg
    2 tsps pure lemon extract
    7 oz whole macadamia nuts (about 1-1/2 cups)

    Preheat oven to 300ºF. Ungreased cookie sheets.

    In med bowl, combine flour, baking soda & salt; mix well with wire whisk; set aside.

    In large bowl with elec mixer set at med speed, blend sugars well. Add butter & cream cheese; mix to form a smooth paste. Add egg & lemon extract; at med speed, beat until fully combined. Scrape down sides of bowl occasionally. Add flour mixture & macadamia nuts. At low speed, blend just until combined. Do not overmix. Drop by rounded tblsps 2" apart onto ungreased cookie sheets.

    Bake 18-20 mins. Immediately transfer cookies with spatula to cool, flat surface.
