    Our lemon bars are extra-irresistible with a topping of tasty shredded coconut!

    List of Ingredients




    COCONUTTY LEMON TRIANGLES

    CRUST:
    1-1/4 cups (2-1/2 sticks) butter OR margarine, room temp
    1 cup confectioners' sugar
    3 cups all purpose flour
    1/4 tsp salt

    FILLING:
    8 large eggs, lightly beaten
    2 cups granulated sugar
    1 cup lemon juice
    1 tblsps lemon zest
    1/2 cup all purpose flour
    1/2 tsp baking powder
    1-1/3 cups sweetened, flaked coconut

    CRUST:

    Preheat oven to 325ºF. Line 13" X 9" X 2" baking pan with enough foil to overhang sides by 1"; coat with cooking spray.

    At high speed, beat butter & sugar until fluffy, 2 mins. On low, gradually beat in flour & salt. Press dough into pan; prick with fork.

    Bake 25-30 mins.

    FILLING:

    Combine eggs, sugar, juice & zest; gradually whisk in flour & baking powder. Pour into pan.

    Bake 15 mins; sprinkle with coconut.

    Bake 10 mins; cool.
