    Recipe Introduction


    Top off these sunny citrus bars with some freshly grated lemon peel.

    36 bars.

    List of Ingredients




    ICED LEMON SHORTBREAD BARS

    3/4 cup powdered sugar
    1/4 cup granulated sugar
    1 cup (2 sticks) butter OR margarine, slightly softened
    2 tblsps grated lemon peel
    1/4 cup lemon juice
    2-1/4 cups Gold Medal all purpose flour
    1/3 cup cornstarch
    1/4 tsp salt

    LEMON ICING:
    2 cups powdered sugar
    2 tsps light corn syrup
    1 tsp lemon peel
    3-4 tblsps lemon juice

    Heat ovent o 325ºF (if using dark or nonstick pan, heat oven to 300ºF). Grease bottom & sides of 13" X 9" X 2" rectangular baking pan with shortening or spray with cooking spray.

    In large bowl with elec mixer on low speed, beat sugars & butter until combined. On med speed, beat until light & fluffy. Stir in lemon peel & lemon juice. Stir in flour, cornstarch & salt; press dough in pan with floured fingers.

    Bake 35-45 mins until top is light golden brown. Cool completely, about 45 mins. Spread with Lemon Icing; let stand 15 mins until set. For bars, cut into 6 rows X 6 rows.

    LEMON ICING:

    In med bowl with spoon, mix all ingredients until smooth & spreadable.
