    Recipe Introduction


    With creamy lemon filling (made from lemon zest & freshly squeezed lemon juice) & a buttery crust, these classic bars offer the perfect combination of sweet & tart. Pack up a batch for Mother's Day or picnic as a treat for neighbors.

    24 2 inch lemon squares

    List of Ingredients




    LUSCIOUS LEMON BARS


    SHORTBREAD:
    3/4 cup (1-1/2 sticks) butter, room temp
    1-1/2 cups all purpose flour
    1/2 cup confectioners' sugar

    FILLING:
    2 lemons
    4 large eggs
    1-1/2 cups granulated sugar
    1/4 cup all purpose flour

    Heat oven to 350ºF. Ungreased 13" X 9" baking pan.

    SHORTBREAD CRUST:

    In large bowl, using your fingertips, work butter, flour & confectioners' sugar until mixture holds together. Transfer dough to ungreased 13" X 9" pan; press into pan.

    Bake 20 mins until edges begin to brown.

    LEMON FILLING: (while shortbread crust bakes)

    Wash & dry lemons, then grate rinds using small holes on your grater (you will need 2 tblsps of zest). Slice each lemon in 1/2; squeeze juice into measuring cup until you have 1/3 cup. Remove any seeds.

    In large mixing bowl, whisk together eggs & sugar. Whisk in flour. Stir in lemon zest & juice. When shortbread has baked, pour filling over it.

    Return pan to oven another 20-25 mins until filling no longer jiggles & edges are lightly brown. (Test by inserting a knife in middle.) Cool; dust with confectioners' sugar. Refrigerate any leftovers.
