    I have made these many times for different functions and they are always a hit, never any leftovers! I get asked all the time for the recipe.


    List of Ingredients




    PINEAPPLE BARS

    1/2 c butter or margarine
    1/4 c sugar
    1-1/4 c a-p flour
    2 eggs
    1 c brown sugar, packed
    1 c crushed pineapple, drained (save juice for icing)
    1/2 tsp almond extract
    1/2 tsp baking powder
    1/4 tsp salt
    2 tbsp a-p flour
    1/2 c chopped walnuts (optional)

    Bottom Layer: Combine butter, sugar and flour in bowl. Crumble together well. Pack in 9x9" ungreased pan.
    Bake in 350F oven for 15 min.

    Top Layer: Beat eggs slightly. Add remaining ingredients. Stir to mix. Spread over shortbread base. Bake in 350F oven for 30 min or until set and a rich brown colour.
    Cut into 36 squares.

    Icing:
    1-1/2 c icing (confectioner's) sugar
    3 tbsp butter or marg
    5 tsps pineapple juice

    Beat all together in bowl adding more juice a few drops at a time to reach proper spreading consistency. Spread over bars.

    HINTS: I use Butter Crisco in place of the butter or marg for the shortbread base. Works great.

    I let the bars cool a good bit before spreading on icing, spreads easier.
    Spread icing gently on bars as top of bars will tear if done otherwise.
    Also, I chill the iced bars in the fridge for several hours or even overnight and they cut (with a sharp knife) much easier and less crumbling.
