Low Fat English Frittata

2 rasher turkey rasher
1 medium tomato(s), halved
3 medium mushrooms, or 4
1 spray low-fat cooking spray
2 medium egg(s)
2 tablespoon skimmed milk
1 pinch salt
1 serving pepper Recipe
Preheat the grill. Grill the turkey rashers for 1 minute on each side. At the same time, grill the tomato halves and mushrooms. Keep the grill switched on.
Heat a medium non-stick frying pan and mist it with low fat cooking spray. Add the turkey rashers, tomatoes and mushrooms.
Beat the eggs with the milk and pour into the pan. Season with salt and pepper. Cook over a medium heat to set the base of the omelette, then transfer to the grill for another few seconds to set the surface.
Slide the omelette from the pan onto a warm plate and eat at once.
I think the best way is not to buy processed packaged food, fresh everything, I don't have much difficulty with this working on a farm, we very rarely buy veg from the supermarket, and I loathe TV dinners
