This is similar to Jalene's, and is popular in Cajun country, an' even mo' simpler.....(simpler???.. Oh, well..)
Throw a 3# block of Velveeta in a small crockpot and add a 10 oz. can of Ro-Tel tomatoes... These are peeled & chopped tomatoes with hot green chilies in them; pretty spicy for you flatlanders...
Stir when the cheese melts... Serve with tortilla chips or Frito's "Big Dippers"...
Sounds like a lot, but it'll prolly be gone by the end of the game...
If there's any left over, it's great mixed into white rice as a side dish for any kind of BBQ...
Delicious, and quite binding................
