    Pork and Sauerkraut Casserole

    I'm not sure what you would call this....kind of a casserole type thing, but I make it at least once a week during harvest. I can make everything a little ahead and then bake it all together for dinner or supper. Soooo I guess I will call it Rob's Keep The Guys Working Casserole. lol. This will feed about 10 large hardworking guys! Scale down to your own size of guests :)

    I have no recipe

    I take 2 dozen pork chops and brown them.

    I make sauerkraut so I guess I put about 2 maybe a little more - quarts in the bottom of a big roaster pan. Arrange the chops on top.

    Next I make regular stuffing (bread, onions, broth, celery etc.) and kind of like Mim's recipe I add extra broccoli and cheese and cream sauce to the stuffing. Put this on the chops:)

    Next comes mashed potatoes :) Sounds a bit heavy huh? But these guys work outside 16-18 hours a day right now. Cover and bake slowly at about 325*. Everything is cooked already but the chops :)

    So that is it. When you dig down in for a serving, it all comes up in layers.

    The guys like salad, cornbread, brownies and sweet tea with this. It is also easy for me to deliver to the fields :) (They actually save the brownies for later!)
