    Almond Shortbread

    ALMOND SHORTBREAD
    1-1/4 cups all purpose flour
    1/3 cup unblanched almonds, finely chopped
    1/4 tsp salt
    1/2 cup butter at room temperature
    1/3 cup granulated sugar
    1 tsp vanilla
    1 tsp almond extract
    1/2 cup semi-sweet chocolate moresls, for drizzling
    confectioners sugar for garnish

    Heat oven to 350F.Lightly grease a large cookiee sheet. Stir together flour,
    almonds & salt. Beat together the butter, sugar, vanilla & almond extract until
    creamy & smooth. Stir in flour mixture. Divide the dough into 4 equal balls. On
    greased cookie sheet, pat or roll each ball to 1/2" round. Smooth edges. Press with
    tines of fork all around the edges if desired. Cut each round into 6 equal wedges
    but do not pull apart. Bake in oven for 12-14 minutes or until lightly browned on
    edges. While still hot, re-cut wedges & remove to a wire rack to cool completely.
    Melt chocolate morsels in a small bowl in microwave. Drizzle over the wedges.
    Sprinkle evenly with confectioners sugar. Store in airtight container. You can
    re-dust with confectioners sugar before serving.
