Dill Biscuits
DILL BISCUITS
2 cups all-purpose, unbleached flour
5 tablespoons unsalted butter, chilled and cut in small pioeces
2 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 tablespoon granulated sugar
1 cup buttermilk
1 tablespoon chopped fresh dill
2 beaten egg yolks for brushing biscuits
Preheat oven to 400 degrees F.
Mix the dry ingredients together. Cut the butter into the mixture until it
resembles coarse meal.
Add the dill and buttermilk. Stir to combine, then gently knead just enough
to bring the ingredients together into a soft dough. Be careful not to
overknead or your biscuits will be tough.
Pat or gently roll the dough onto a floured surface and cut with a biscuit
cutter. Repeat if necessary.
Place th biscuits on a cookie sheet sprayed with non-stick cooking spray, and
brush each one with the beaten egg yolks.
Bake for 15-20 minutes or until golden.
