    Drop Cornmeal Biscuits

    1.75 cups all-purpose flour
    2/3 cup cornmeal
    2 T. sugar
    1 T. baking powder
    1/2 t. salt
    1/2 cup cold butter
    1 cup buttermilk*

    Heat oven to 450 degrees.
    Combine flour, cornmeal, sugar, baking powder and salt in large bowl;
    cut in butter until mixture resembles coarse crumbs.
    Add buttermilk; stir until mixture is just combined.
    (If batter is too thin, stir in 1 to 2 tablespoons all-purpose flour.)
    Drop by 1/4 cupfuls 1 inch apart onto greased baking sheet.
    Bake for 12 to 14 minutes or until golden brown.

    NOTE: * Substitute 1 tablespoon lemon juice or vinegar plus enough milk to equal 1 cup.
    Prep. time 10 minutes, baking time 12 minutes. Makes 1 dozen biscuits.
    Nutrition values: 170 calories, 3 grams protein, 22 grams carbohydrate, 1 gram fiber, 8 grams fat,
    20 mg. cholesterol, 300 mg. sodium.
