Chamomile Tea Cookies
1/4 c. dried chamomile flowers
1/2 c. softened butter
1 c. sugar
2 eggs
1 t. vanilla
1.75 cups flour
Carefully chop the chamomile blossoms and set aside.
(I don't chop. I pulverize in a coffee bean chopper. I don't like to bite into bits of flower)
Cream the butter and sugar, then beat in the eggs and vanilla.
Stir in the flour and chamomile.
Drop by scant teaspoons onto a lightly greased cookie sheet.
Bake at 350 degrees for 8 to 10 minutes.
Cool on racks.
Store in airthight containers with waxpaper between layers.
Makes 4 to 5 dozen cookies.
