**CRUST**
1 cup bleached all-purpose flour
1/4 cup confectioner's sugar
1/2 cup (1 stick) unsalted butter
**FILLING**
1 cup granulated sugar
1/4 cup (packed) whole lemon balm leaves
2 tablespoons bleached all-purpose flour
1/2 teaspoon baking powder
pinch coarse salt
3 tablespoons fresh lemon juice
2 eggs
**GARNISH**
Confectioner's sugar
1. Preheat oven to 325 degrees if using a glass or nonstick baking dish, 350
degrees for all other types.
2. Make crust: Stir together flour and sugar. Cut in butter with your
fingertips or a pastry blender (or pulse in a food processor...do not
overprocess) until mixture resembles coarse crumbs. Press evenly into an
8-inch-square baking pan. Bake for 20 minutes.
3. Meanwhile, make filling: In a food processor or blender, whiz sugar and
lemon balm leaves until leaves are finely ground. Transfer to a medium bowl
and whisk in flour, baking powder, and salt. Whisk in lemon juice and eggs.
4. As soon as crust is baked, pour filling over and return to oven. Bake 20
to 25 minutes more, until top feels barely firm. Cool on wire rack; dust
with confectioner's sugar before cutting. Store in an airtight container.

NOTES : Light and lemony, based on a recipe my mother has used for years,
these bars are a simple introduction to using herbs in desserts. You can cut
them into even smaller bars for a delicate presentation.
