Peppermint Herb Cookies
PEPPERMINT HERB COOKIES

1 c. butter
1/2 tsp. peppermint extract
2 T. crushed, dried peppermint leaves
1/2 c. peppermint sugar
1/2 c. sugar
2 c. flour
1/4 tsp. salt
Cream together butter and sugar. Add extract and peppermint leaves,
flour and salt. Mix thoroughly. Chill dough for at least 2 hours.
Form 1" balls and roll in peppermint sugar.
Press center with your thumb.
Drop a few peppermint leaves in the thumbprint. Add more sugar, if
necessary. Bake at 350* for 12-15 minutes. Makes 3-6 dozen
May be kept in freezer until ready to serve
