1 (16oz.) box Angel Food Cake Mix
1/2 c. powdered sugar
1 (8oz.) pkg. cream cheese, softened
1.25 c. Cool Whip, thawed
1/2 c. strawberry jam
1 pint strawberries-washed and sliced
Extra powdered sugar for sprinkling on cake
Preheat oven to 350 degrees.
Cut a piece of parchment paper long enough to fit over both ends of a jellyroll pan.
make cake according to package directions.
Pour batter over parchment paper, spread evenly in pan.
Bake 30 minutes.
Remove from oven.
Sprinkle powdered sugar over entire cake.
Place a sheet of parchment paper over cake; place a cooling rack upside down
over parchment paper.
turn everything over.
Remove parchment from cooked cake.
Roll cake up in parchment, which is under cake on cooling rack.
Cool completely on cooling rack. Unroll.
Spread jam thinly over entire cake, pressing lightly.
Mix cream cheese and 1/2 c. powdered sugar.
Fold in 1-1/4 c. cool whip, reserving 1/4 c. for ends.
Spread over strawberry jam.
Lay sliced strawberries over cool whip.
Reroll cake without parchment paper.
Fill in ends with 1/4 c. reserved cool whip.
Sprinkle top and sides with powdered sugar.
Slice using a serrated knife.
