    Pineapple Coconut Pie

    Pineapple Coconut Pie

    1 unbaked 9-inch pie crust
    3/4 cup sugar
    3 tablespoons melted butter
    2 tablespoons flour
    1 cup milk
    1 teaspoon vanilla
    3 large eggs, separated
    1 cup crushed pineapple with juice
    1/4 cup flaked coconut
    Extra coconut for topping

    Combine sugar, flour and butter with a fork, mixing until blended. Add
    yolks and vanilla, blending well. Add milk, pineapple and coconut. Blend
    well. Beat egg whites to stiff peak stage and gently fold into mixture.
    Pour into prepared pie crust. Bake in a preheated 400 F. oven for 10
    minutes; reduce temperature to 350 F. and bake for 25-30 more minutes.
    During the last 10 minutes of baking, sprinkle top with 1/3 cup coconut and
    continue baking.
    Serves 6
