Queen Anne's Lace Jelly
4 cups water
18 Queen Anne's Lace flower heads
1 package Sure-Jell or equivalent
3.5 cups sugar plus 2 tablespoons
Bring water to a boil and remove from heat. Add flower heads. Let steep, covered, for 30 minutes. Remove cover and let cool slightly. Strain through cheesecloth. Put 3 cups infusion into a pot. Add Sure-Jell and bring to a rolling boil, stirring constantly. (It is very important to stir the liquid constantly.) Add sugar, stirring constantly, and cook until mixture comes to a rolling boil. Boil 1 minute longer. Remove from heat. Skim and pour into sterilized jars. Seal.
Yields: Four 8-ounce jars
