No Cook Tomato Sauce
2 pounds ripe tomatoes about 6 medium peeled and cut in to small pieces
1/2 pound fresh mozzarella cheese cut in small pieces
1 cup packed fresh basil leaves cut in to strips
2 tablespoons olive oil
1 tablespoon red wine vinegar
1 teaspoon salt
1/4 teaspoon ground black pepper
In a medium bowl combine all of the ingredients. Stir gently to mix
well. Let sauce stand at room temperature at least 15 minutes or up to 1
hour to develop flavors.
Serve all of this sauce over 1 pound of hot cooked pasta.
