    Italian Cookies

    My Grandmother used to make these for special occassions.
    Now I make them all the time they are my childrens favorite cookie. And they are oh so simple.

    1/2 c. margarine
    1/2 c. shortening
    3/4 c. powdered sugar
    1 3/4 c. flour with
    1/4 c. corn starch added to the flour
    1 T. vanilla extract
    1 t. almond extract
    1/2 c. ground nuts (optional)

    Cream together sugar, shortening, and margarine. Add vanilla and almond extracts. Now mix in the flour and corn starch mixture. If using nuts add them now. Mix this all together then form small balls about 3/4 inch in diameter.
    Place on cookie sheet into pre heated 350 degree oven.
    Bake about 20 minutes depending on your oven. These do not get brown. If they are browning turn your oven down 25 degrees. Remove from pan. Cool thoroughly. These can be rolled in powdered sugar right away, or frozen for later use. They keep for a long time even when unfrozen.
