    French Doughnuts

    2 quarts canola oil
    2 c. all purpose flour
    2 c. milk
    2 t. coarse salt
    2 t. sugar
    1 c. (2 sticks) unsalted butter cut into pieces
    9 extra large eggs
    vegetable oil cooking spray

    1. Haet oil in a low sided 6 1/2 quart saucepan over medium heat until deep frying thermometer registers 360 degrees. cut thirty 4" squares out of parchment paper. Line 2 baking pans with paper towels.

    2. In the meantime, sift flour into a medium bowl. In a medium saucepan, combine the milk, salt, sugar, and butter. Bring to a boil over medium-high heat. Remove from heat and add the sifted flour, all at once. Stir constsntly until all flour has been incorporated. Return to heat; cook, stirring constantly, until the dough pulls away from the sides of the pan. This takes about 30 seconds. Remove pan from heat.

    3. Transfer the dough to your electric mixers bowl, use your paddle attachment or dough hook. Do NOT use your beaters. Beat on low speed until the bowl feels lukewarm on the outside, usually it will take four or five minutes. Add eggs 1 at a time, make sure they are incorporated well after each egg has been added.

    4. Coat baking pan with cooking spray, spread 5 squares of parchment and generously spray the parchment. Fit a large pasrty bag with a #4 star tip; fill with dough. With one smooth motion, pipe a double layer of dough onto each square of parchment. Make it in a circle.

    5. Carefully lift the squares and set to the side. Continue doing this until all dough has been formed.

    6. Now gently drop each doughnut into the pan cooking 5 at a time. When lightly browned turn over and continue cooking until they are golden and done. Spinkle with powdered sugar or make an icing of Powdered sugar with water and drizzle over the top.

    Note:
    You may add 2 1/2 t. poppy seeds at the end of step 3. If you add the poppy seeds then make your glaze with lemon juice and powdered sugar and drizzle this over the top and sprinkle extra poppy seeds on top for decoration and so people know that those are the poppy seed doughnuts.

    If you would like chocolate icing add cocoa powder to the powdered sugar and add water or milk and drizzle this.
