    Kiszka Pronounced Keesh-ka

    3 lbs. pork steak or pork shoulder
    2 lbs. coarse buckwheat grits
    1/2 t. rubbed marjoram
    salt and pepper to taste.

    Chop meat into coase bits. Cover with water and boil until tender. Add salt, pepper, and marjoram. Wash the buckwheat grits, cover with the liquid from the cooked meat,and steam in double boiler for half an hour. If you have casings stuff this into the casings. If you do not you can place it into a mold and weight it down for about 8 hours. I use a narrow pan that looks similar to a loaf pan. If that is being used for something else, I use a loaf pan. Heat before serving.
