    My Families Spaghetti

    We used to have this every other weekend when I was a kid and I still remember the smell of it simmering all day long on the stove.

    3 Lg. cans Italian tomatoes
    3 Sm. cans tomato paste
    3 sm. cans tomato sauce
    2 pounds of ground beef
    2 pounds of Italian sausage
    2 pounds of pork neck bones
    4 ribs of celery
    1 very large onion
    4 cloves of garlic

    Place all ingredients into a very large kettle. Pour two cans of water from the tomato cans. Then add three cans of water from the tomato paste cans stir the water around to get as much of the leftover paste from the cans. Add a generous pinch of sugar, some salt and pepper to taste. Bring this to a boil then turn it down to simmer. Simmer this for at least 4 hours stirring frequently.

    About 1/2 hour before you want to have your spaghetti dinner cook your pasta. I like to use Rotini or Ziti. I like a pasta that holds the sauce. Serve with Garlic bread, a green vegetable, a salad, and beverage of choice. Of course have plenty of grated Romano or Parmesan cheese handy.
