    Tortilla Soup

    List of Ingredients




    3 T. corn oil
    1 tsp. chopped garlic
    2 C. diced onion
    2 C. diced celery
    12 - 6 inch corn tortillas
    1 gallon chicken stock
    12oz. 1 1/2 C. diced canned tomatoes w/ juice
    2 C. corn kernels
    1 C. diced gr. bell pepper
    2 C. diced cooked chicken meat
    1 T. chili powder
    1 tsp. cumin
    salt & pepper & hot sauce

    Recipe



    In 2 gallon stock pot, heat oil. Add garlic, onions, celery and saute until
    translucent. Roughly chop tortillas and saute w/ garlic mixture, stirring
    frequently so they don't burn. Saute til mushy.

    Add stock and tomatoes with juice, bring to boil, reduce heat to simmer.
    Stir til tortillas are emulsified

    Add corn, chicken and bell peppers. Season with spices.
