Recipe Introduction
Level 1 ~ Pro/Fat ~ Since we can no longer have the crepes made with flour & egg - these are a very nice legal substitute. They hold up very well to filling, rolling and baking (even with a sauce over them). I prefer adding the extra ingredients rather than just using eggs.

6 eggs
Cream
Olive oil (for savory) or melted butter (for sweet) (optional)
Water (if cream is too thick)
Spices

Whisk these all together by hand, adding water if mixture looks thick - I like a thin batter.
Add appropriate seasonings. For example, if using this for a Mexican dish, I add cumin and chili powder, etc. If you're using these for something sweet, I would add Splenda, perhaps some cinnamon, etc.
Make crepes very thin. I can get 12 (8”) crepes from this. If you're new to making crepes, they can be made in a wide bottom non-stick frying pan. If you don't have luck with this, I would recommend a good crepe pan. I have an 8" that I bought a few years back at Target, but I don't believe they carry it anymore. I ordered this 10" pan from Amazon and it works great, although the crepes are quite large.
