Level 1 ~ Pro/Fat ~ This is one of those recipes that's "to taste". When I make it, I make a corned beef in the crock pot just to use in here. I haven't tried it with deli corned beef. I do not rinse my kraut, just drain it. The one time I rinsed it, it wasn't flavorful at all. The amount of sauerkraut you use depends on how much corned beef you use. Same for the Thousand Island dressing.

List of Ingredients
Mix 1 jar of drained and rinsed sauerkraut with 1/4 cup of LC Thousand Island dressing and a good sprinkle of caraway seeds, then layer it with 1/2 pound (or so) chopped up sliced corned beef from the deli and 1/2 pound (or so) sliced Swiss cheese. Bake the whole thing in a nice deep dish until hot and bubbly.
The amount of sauerkraut and dressing depends on the amount of corned beef. What I do is cook a corned beef in the crock pot all day, then shred the beef and make this casserole.
Next time I make this, I’m going to stir everything all together and then layer in the corned beef mixture, layer of cheese, another layer of c.b. topped with more cheese...
