1/2 pound sausage meat (I used Jimmy Dean hot)
1/2 cup onion -- chopped (I used sweet onion)
1/2 teaspoon salt
1/4 teaspoon garlic powder
12 eggs
1/4 cup green pepper -- chopped (I used red)
1/4 teaspoon pepper
1/2 cup shredded cheddar cheese

In a skillet brown the sausage and drain well.
In a bowl, beat the eggs. Add onion, green pepper, salt, pepper, and garlic powder. Stir in the sausage and cheese. Spoon by 1/3 cupfuls into greased muffin cups. Bake at 350°F (180°C) for 20-25 minutes, or until a knife inserted near center comes out clean.
* Deb's notes - We really enjoyed these. Next time I will definitely use foil cupcake liners, the tin was so difficult to clean, even after dousing it with spray Pam. Try adding some mushrooms. The red peppers were so good and sweet in here. I used sweet onion also.
I also added the cooked sausage and the cheese to the muffin cups, then ladled in the egg mixture on top. I thought this would be easier as the sausage would have sunk to the bottom of the bowl; this way the sausage and cheese was evenly distributed.
