    List of Ingredients




    1 (6 oz) can tuna
    1 egg
    spicy pork rinds, crushed (1/2 of a quart ziploc bag)
    1/4-1/2 cup cheddar cheese (shredded)
    diced onions (to your liking)
    black pepper
    celery seeds (or diced celery)
    1 tablespoon prepared Hidden Valley Ranch dip mix (or legal Ranch dip)
    1 tablespoon Hellmann’s Mayo

    Recipe



    Mix together and refrigerate for about 10 minutes. Spray pan with Pam and fry about 4 minutes on each side....enjoy!

    I have this with fresh homegrown tomatoes and green beans to make it a meal.

    For the pork rinds: I just get a quart ziploc bag and fill it 1/2 to 3/4 full and then crush them.

    * Deb's notes: I will keep the ingredients on hand as this is a quick meal and we really loved this. We could *not* taste the pork rinds in here - I am not a pork rind fan at all. It may have been the brand, I don't know.

    The recipe above makes 3 good sized patties. I fried them in a little butter. On the amount of rinds - I doubled the recipe and used almost a 3 ounce bag (of uncrushed rinds). I use Uncle Dan's dip mix (prepared) instead of the HVR, that's what I had on hand. I used 1/2 cup cheese for a double recipe.

    I served the patties with sliced tomatoes and the KFC coleslaw clone recipe - so good!

    The spicy pork rinds really balanced out the strong canned tuna flavor very nicely. If you buy spicy pork rinds, be sure and double check the ingredients for funky ingredients and added sugar.
