Picante Chicken

List of Ingredients
1 (28 oz.) can crushed tomatoes
1 onion, chopped
1 garlic clove, crushed
1 green pepper, chopped
2 tablespoons olive oil
1 tablespoon chili powder
1/2 teaspoon cumin
1/2 teaspoon Italian seasoning
pepper to taste
1 (8 oz.) can tomato sauce
1/2 cup picante sauce (no sugar)
assorted chicken pieces, skinned and rinsed
1 cup shredded cheddar cheese
Recipe
Saute onion, peppers and garlic in olive oil. Add remaining ingredients except chicken and simmer 10 minutes. Brown chicken. Place chicken in casserole dish. Top with sauce.Bake 1 hour at 350 (covered). Remove from oven, uncover and sprinkle with cheese and bake just until cheese melts.

* Deb's notes: I use chicken breasts (7), but I think thighs would be great in here too, or like the recipe calls for, 'assorted chicken parts'. I use Pace Picante sauce, and a red pepper instead of green (we like the red better). This makes a LOT of sauce - would be great with some mashed cauliflower or celery root on the side, and broccoli. You can even omit the cheese, which I think I may do next time as it's just not needed, the sauce is that good.
