Recipe Introduction
Level 1 ~ Pro/Fat ~ kidsmom's quote: This is absolutely fabulous. It is already test proven. My husband told me to make it again SOON and to double the recipe because it is even better the next day!
List of Ingredients
3 pounds boneless chicken breasts
1/2 sweet onion
1 cup chicken broth
1 teaspoon pepper
2 teaspoon garlic salt
2 teaspoon Adobo seasoning
1 (14 ounce) can diced tomatoes with green chiles
2 cups shredded cheddar cheese
4 ounces cream cheese
1 cup sour cream
-------
Adobo Seasoning (posted by Pippa)
4 cloves garlic
1 teaspoon dried oregano
1 teaspoon peppercorns
1/2 teaspoon paprika
1 teaspoon salt
Grind all the ingredients together in a mortar and pestle to make a paste.
Recipe
Simmer chicken breasts in chicken broth, onion and seasonings. Cook until tender and no longer pink. Remove chicken and let cool for 5 minutes. Strain broth mixture. Cut chicken into bite size pieces, return to pan with strained onions and tomatoes. Mix well. Spray an 9x13 pan with cooking spray and put chicken into pan. Cover with a layer of cheddar cheese. Dot cream cheese on top and then add a layer of sour cream. Bake in 350 degree oven covered for 15-20 minutes. Uncover, spread remaining cheddar cheese and cook for 5 minutes longer or until cheese melts. Delicious!! Serve with a salad or favorite veggies.

*Deb's notes: I didn't have any Adobo seasoning, so I followed Pippa's recipe. I also find it easier to dot on the cream cheese first, then cover with a layer of cheddar cheese - that way I can put it down into the chicken mixture easier.
This chicken is so moist and tender fixed this way!
