    Level 1 ~ Pro/Fat - Veggies.
    We just love this salad. It's a great salad to make and take to functions too. I actually get requests for it.

    My own notes & tweaks are at the end.

    List of Ingredients




    1 head cauliflower
    1 head lettuce
    2-3 bunches green onions (scallions) -- chopped
    1 pound bacon -- fried and crumbled
    1/2 cup Parmesan cheese -- to taste
    Salt and pepper
    4 Splenda packets (to 8tsp. sugar) *this is to taste*
    2 cups mayonnaise

    The original recipe says to put lettuce, cauliflower, bacon, onions in bowl and sprinkle over sugar, salt, pepper, Parmesan cheese. Then spread mayo over top to "seal" then cover and let sit over night or several hours. Toss and serve.

    I personally mix the mayo with the sweetener and salt and pepper "to taste" then mix it all up. Lettuce gets wilty after a day, so if you make for several days of eating I recommend mixing dressing separately and add to your serving up to a few hours before eating. People of all ages love this salad!!!

    This recipe has been a staple at holidays in my family for years and is AWESOME!

    Deb’s notes - Instead of “frying and crumbling” the bacon - I always take the whole pound, cut it into thin slices and then fry. No need to “crumble” it that way. I use the called for 2 cups mayo, but I increase the Parmesan to 1 cup. I use 2-3 splenda packets, 4 is just too sweet. If time allows, I usually make this the day before - but I have made it in the morning for dinner that night.

    If you need a larger salad, simply use a bigger head of lettuce. Enjoy!
