    KFC Cole Slaw Clone

    Inspired by Todd Wilbur's clone recipe (Top Secret Recipes)

    Recipe Introduction

    Level 1 ~ Pro/Fat

    List of Ingredients

    8 cups finely shredded cabbage
    2 tablespoons minced onion (I use dried - it’s easier)
    1/3 cup sugar (use equivalent)
    1/2 teaspoon salt
    1/8 teaspoon pepper
    1/4 cup cream
    1/2 cup Mayonnaise
    2 1/2 tablespoon red wine vinegar (or vinegar of choice)
    2 1/2 tablespoon Lemon Juice
    1 tablespoon grated horseradish
    1/2 - 1 teaspoon celery seed
    Orange or red sweet pepper - I like to dice up about 1/2 of a pepper to simulate carrots


    Recipe

    Be sure cabbage is chopped very finely.
    Combine the sugar substitute (I use Splenda), salt, pepper, horse radish, onion (if using dried), celery seed, cream, mayonnaise, vinegar and lemon juice in a large bowl and whisk well until smooth.
    Add the cabbage and onion (if using fresh) and mix well.
    Cover and refrigerate for at least 2 hours before serving.

    * Deb's note ~ I chop the cabbage in my food processor (Cuisinart) and it works great! Just watch it closely or you'll end up with pureed cabbage. I use the "S" blade and pulse it until it's the right size, doing a little at a time.
