    Recipe Introduction

Pro/Fat & Veggies ~ Level 1 (Pro/Fat because of the vegetable oil. Omit oil to eat with a Carbo meal.)

We love braised red cabbage. I've tried several recipes and so far, we like this one the best. Who doesn't love Balsamic vinegar? *Ü*

    List of Ingredients

    2 tablespoons vegetable oil
3/4 pound red cabbage, sliced thin (about 6 cups)
1 medium red onion, sliced thin
    1/4 cup water
    1/2 cup balsamic vinegar
    1 tablespoon sugar

    Recipe

In a large heavy skillet heat oil over moderate heat until hot but not smoking and cook cabbage and onion, stirring, 10 minutes or until just tender. Stir in water, vinegar, sugar, and salt and pepper to taste and simmer, stirring occasionally, until almost all liquid is evaporated and vegetables are tender, about 15 minutes.

*Deb's notes: I used a sweet onion, as that's what I had on hand. I sliced the cabbage and onion in my food processor using the thinnest blade. This has a very nice "tang" to it!
