Chipotle Mashed "Potatoes" (Cauliflower)

Level 1 ~ Veggie -- This is a recipe I saw on Food Network's site (Bobby Flay's show) using potatoes. I simply substituted cooked cauliflower for the potatoes and adjusted some of the liquids as we would have 'soup' using that much with the cauliflower.
The chipotle puree gives this a really nice flavor!

1 large head of cauliflower, cooked
4 tablespoons unsalted butter
3/4 cup heavy cream, warmed (Deb's note - use LESS cream for this dish using cauliflower)
1 tablespoons chipotle puree*
4 cloves roasted garlic, smashed to a paste
Salt and freshly ground pepper
* Deb's note - I always add a 'hunk' of cream cheese
Not knowing what "chipotle puree" was, I bought a small can of cooked chipotle peppers in Adobo sauce (very spicy hot!) and simply pureed that in the food processor. I froze the rest in 1 tablespoon increments for future use.
Recipe
Place cauliflower in a large bowl, add butter, warm cream, chipotle puree and garlic and mash until smooth. Season with salt and pepper.
Deb's notes: I always use fresh cauliflower as I'm not happy with the end product when mashing it - using frozen cauliflower. It's too grainy, I don't care for its texture.

I "mash" my cauliflower in my food processor, but you can mash it any way you'd like.
I like adding a 'hunk' or two (about 2-3 ounces, to taste) of cream cheese to my mashed cauliflower.
I always have roasted garlic in the freezer for recipes such as this.
I used regular salted butter.
