    Level 1 ~ Pro/Fat & Veggie ~ The entire title of this recipe is, "Caramelized Onion and Gorgonzola Mashed "Potatoes", but it wouldn't fit in the recipe line.


    List of Ingredients




    1 head cauliflower
    1 3/4 teaspoon salt, divided
    2 tablespoons butter
    1 tablespoon olive oil
    1 medium onion, diced
    4 garlic cloves, minced
    1/2 teaspoon dried rosemary
    1/2 cup butter
    3/4 cup cream
    3/4 cup crumbled gorgonzola or blue cheese
    3/4 teaspoon pepper

    Recipe



    Bring cauliflower, 1 teaspoon salt, and water to cover to a boil in a Dutch oven; cook 20 to 25 minutes or until tender. Drain and keep warm.
    Melt 2 tablespoons butter with oil in a skillet over medium heat; add onion, and cook, stirring often, 12-17 minutes or until tender. Add garlic, and cook 3 min. Stir in rosemary; remove from heat.
    Mash cauliflower; stir in 1/2 cup butter, cream, and cheese until blended. Stir in onion mixture, remaining 3/4 teaspoon salt, and pepper. Spoon mixture into 13x9 casserole dish to fill bottom. Heat through. Broil 3 inches from heat, 5 minutes or until top is lightly browned.


    Deb's notes - My husband loves this recipe. A kitchen gadget that comes in quite handy for cauliflower is a potato ricer. (See a picture of one here: http://makeashorterlink.com/?U3901274A) This is the Oxo brand that I bought at Bed, Bath & Beyond for $20 (use those coupons they're always sending us for extra savings). I put the cooked cauliflower in the ricer and apply gentle pressure to squeeze the water out prior to mashing them or using the food processor. The ricer is also great for squeezing the water out of thawed, frozen spinach. I love this ricer - it's worth the extra money because of its design, all stainless steel and it's comfortable handles.
