Recipe Introduction

As a rule - my husband and I love anything cooked in tomatoes and this stewed okra is no exception. Be sure to cook the okra long enough, it will never be slimey that way.
List of Ingredients
1/2 large sweet onion, chopped
3-4 garlic cloves (to taste), minced
1-2 teaspoons salt (to taste)
1 teaspoon black pepper
1 teaspoon chili powder
1/4 teaspoon crushed red pepper flakes (optional)
1 tablespoon bacon grease
2 (14.5 ounce) cans Muir Glen fire roasted diced tomatoes
16 ounce bag frozen okra (*may use fresh)Recipe
Melt bacon grease and sautee the onion and garlic for about 5 minutes.
Add 2 cans of the diced tomatoes and all the spices and simmer for about 20 minutes. Add the okra and simmer for about 15-20 minutes more (20 minutes if using fresh okra).
When you serve this into a bowl, you can top it with a little grated Parmesan if you'd like.
* If using fresh okra, wash it and remove fuzz. Cut into 1 inch pieces, discarding stem end.
Deb's tip: When I fry bacon, I save the bacon grease. I like keeping it in a covered container in the refrigerator. I also keep a container in the freezer. I hate running out of anything!
I can find frozen okra here on sale for $1.25 for a 16 ounce bag. That's very economical.
We love Muir Glen's fire roasted tomatoes! They're not essential for this though. You can substitute 1 can of plain diced and 1 can or Rotel, etc. if you'd like.
The spice amounts in the recipe are all to taste!
