    POTATOE SKINS WITH FAT FREE CHEESE

    List of Ingredients




    This is very good for a party or to snack on. I make these occasionally and everyone loves them and they don’t even know that they are almost totally fat free. I use sauce with mine too but you don’t have to they are great as they are.

    3-4 large potato
    1 cup of grated fat free mozzarella cheese

    Recipe



    Bake or microwave the potatoes until tender. Cut them in half and scoop out the inside, leaving a thin layer of the skins. You can keep the scooped out potatoes for another meal. Cut the potatoes skins in half again and if you like you can cut them again. Place them on a cooking sheet skin-side down. Put your grated cheese on top and broil for 4-5 minutes or until cheese has melted and turning brown.
    I eat them the way they are or I dip them in fat free dipping sauce. Guests won’t even know!
