    CIDER BAKED RABBIT

    List of Ingredients




    Rabbit is also great meat to eat with a very low fat diet because they don’t hardly have any fat on them. This is sooooooooooo good.

    1 lb of rabbit pieces
    1 tbsp. flour
    1 tsp. dry mustard
    3 medium leeks, thinly sliced
    1 cup of dry cider
    2 springs of rosemary
    Salt and pepper to taste

    Recipe



    Preheat oven to 350 F. Place the rabbit pieces in a bowl and sprinkle over the flour and mustard. Toss to coat evenly. Arrange the rabbit in a casserole dish. Blanch the leeks in boiling water, then drain and add to the casserole dish. Add the cider, rosemary, and seasoning, cover and bake for 1 – 1 ¼ hours, or until rabbit is tender. Garnish with fresh rosemary. I served this with a baked potato and some veggies.
