Gail's Banana Bread
A family favorite from my sister Gail... this is really more like cake than a bread!

Gail's Banana Bread

1/3 cup vegetable oil
1 1/2 cups mashed bananas (about 3 large)
1/2 teaspoon vanilla
3 eggs
2 1/3 cups Bisquick® baking mix
1 cup sugar
1/2 cup chopped nuts -- optional
Heat oven to 350. Grease the bottom of a 9x5x3" loaf pan. Mash or mix bananas well.
Stir all ingredients together and beat vigorously for 1 minute.
Bake until a toothpick in center comes out clean. Check after 40-45 minutes, this bread may take up to 55-60 minutes to cook completely. (I usually do mine for about 50). Cool for 5 minutes and remove from pan.
