    A great alternative to regular cornbread... we use a BIG spoon to dip it out with!

    Amount Measure Ingredient -- Preparation Method
    -------- ------------ --------------------------------
    1 1/2 cups boiling water
    1 cup cornmeal
    1 teaspoon salt
    2 tablespoons butter or margarine
    1 cup milk
    2 large eggs -- lightly beaten
    2 teaspoons baking powder

    Pour boiling water over cornmeal gradually, stirring until smooth. Add salt and butter, stirring until blended; cool 10 minutes.

    Gradually stir in milk and eggs. Add baing powder, stirring until blended. Pour mixture into a lightly greased 1 1/2 quart baking dish.

    Bake at 375 for 40 minutes or until lightly browned.
