    Amount Measure Ingredient -- Preparation Method
    -------- ------------ --------------------------------
    2 cups baking mix
    1 cup milk
    1 tablespoon sugar
    2 tablespoons lemon juice
    1/8 teaspoon vanilla extract
    2 teaspoons baking powder
    2 eggs

    Heat griddle or skillet over medium-high heat; grease griddle if necessary. (Note: I spray mine each time with Pam before I pour the batter)

    Stir all ingredients until blended. Pour by slightly less than 1/4 cupfuls onto hot griddle. Cook until edges are dry and pancake bubbles. Turn once and cook until golden.
