    Granny Toot's Chocolate Pie

    From my husbands Great Aunt Tudell “Granny Toots” Caldwell.

    List of Ingredients




    Pie Filling
    1 cup Sugar
    2 TBS. Cocoa
    2 TBS. Corn Starch
    pinch salt
    2 cup evaporated milk
    3 eggs
    1 tsp. vanilla
    1 t. butter

    Meringue

    3 egg whites
    ¼ tsp. cream of tartar
    6 TBS. sugar
    ½ tsp. vanilla

    Recipe



    Separate eggs & set whites aside for meringue.
    Let them warm to room temp.
    Prepare pastry crust.
    In a saucepan mix sugar, cocoa, corn starch & salt.
    Gradually blend in milk.
    Cook over medium heat stirring constantly until mixture thickens & boils.
    Boil & stir 1 minute.
    Remove from heat.

    Gradually (by spoonfuls) stir at least half of the hot mixture into the egg yolks.
    Blend egg yolk mixture into the hot mixture in the saucepan.
    Boil & stir 1 minute longer.
    Remove from heat.
    Stir in margarine & vanilla.
    Pour into pie shell.


    Immediately prepare meringue.

    Preheat oven to 400º

    Beat egg whites and cream of tartar until foamy.

    Beat in sugar. 1 TBS. at a time; continue beating until stiff and glossy. Do not underbeat.

    Spoon meringue onto hot pie filling; spread over filling, carefully sealing meringue to edge of crust to prevent shrinking or weeping.

    Bake until delicate brown, about 10 minutes.

    Cool away from draft.
