    This is a recipe that my friend Brenda's mother made up to stretch a couple of lbs of hamburger far enough to feed her family. Brenda says is must be made in a skillet not a pot.

    List of Ingredients




    2 to 3 lbs. hamburger
    1 slice brown bread, broken
    1 can corn, drained
    1 onion, sliced
    1 tomato, sliced
    1 small can tomato juice. (the one that's the size of a can of pop)

    Recipe



    Brown 2 to 3 lbs. of hamburger in a skillet.

    Break one slice of brown bread into the meat.

    Add one can of corn.

    Lay slices of onion over the meat mixture. They should cover the meat.

    Lay slices of tomato to cover the onion.

    Carefully pour the tomato juice over the tomatoes.

    Simmer without stirring until onions are done.


    My Notes ~ This simple recipe is pure comfort food. It's quick, easy and surprisingly tasty. I like it served with slaw and cornbread. It is kind of like hamburger helper so if you have problems with things that look like slop you probably won't like this. Actually, it looks more like Sloppy Joe without the bun. CP
