Mozzarella Balls

List of Ingredients
6 mini Mozzarella balls or a 4 oz. large Mozzarella balls, chunked up
4 ounces cheddar cheese cubes
1 bell pepper, chunked up
4 ounce small whole mushrooms, or large ones sliced (optional)
1 cup mixed olive and vegetable blend (or your dad's favorite olives, etc.)
1/2 cup diced proscuitto (optional)
2 tablespoons onion, minced (optional if the olive blend already contains onions)
1 teaspoon each: dried thyme and basil or 1 tablespoon fresh
1-1/2 teaspoons dried oregano or 2 tablespoons fresh
2 generous teaspoons minced garlic
A dash of red pepper flakes
Olive oil to cover
Optional but very good: 3-4 tablespoons red wine vinegar or more to taste
Recipe
Mix cheese, peppers, mushrooms, olives, onions, etc. together. Mix herbs and spices together and sprinkle over mixture. Blend well.
Add wine vinegar and mix again. Add enough oil to barely coat ingredients. Mix well and taste.
Adjust seasonings. Lay on a nice platter lined with mesclun greens.
