List of Ingredients
1 whole beef tenderloin approximately 3 pounds
4 tablespoons butter softened, divided
1/2 cup onions chopped
4 tablespoons soy sauce
2 teaspoons Dijon mustard
1/8 teaspoon pepper
1 cup dry sherry
Recipe
1. Spread tenderloin with 2 tablespoons butter. Put on rack in shallow baking pan. Bake, uncovered, in preheated 400 degree oven for 20 minutes.
2. Meanwhile in 1 quart saucepan cook onions in 2 tablespoons butter until tender. Add soy sauce, mustard, and pepper. Stir in sherry. Heat to just boiling and pour over tenderloin.
3. Bake 20-25 minutes more for rare beef. Use meat
thermometer. Baste frequently with sauce. (If beef is thicker in middle than ends, slice 3 inches from each end to bake middle faster.) Serve sliced according to personal preference with sauce.
Note: I tripled the sauce and added two packages of sliced fresh mushrooms. Also, I did not cut the meat.....tied the thinner ends under the roast. Worked beautifully.
