Beef Tenderloin with Mustard Sauce

2 tablespoons chopped parsley
1 tablespoon coarse black pepper
1 teaspoon salt
1 teaspoon dried thyme
1 teaspoon olive oil
1 beef tenderloin (about 3 pounds)
Mustard Sauce:
2 tablespoons fresh lemon juice
2 tablespoons dijon-style mustard
2 tablespoons capers
1 tablespoon chopped parsley
1/2 teaspoon salt
1/2 teaspoon sugar
1/3 cup olive oil
Recipe
Prepare grill or heat oven to 425°. Combine parsley, pepper, salt, thyme and oil in bowl. Rub mixture all over tenderloin.
Grill beef, turning occasionally, for 30 minutes. or roast in 425° oven for 35 to 40 minutes, or until internal temperature reads 140° for medium-rare or until desired doneness. Let rest 10 minutes before slicing.
Meanwhile, prepare mustard sauce: whisk together lemon juice, mustard, capers, parsley, salt and sugar in small bowl. Whisk in oil in a slow, steady stream until thickend. Serve with the tenderloin.
