    1 1/2 pounds Ground Beef
    2 small carrots or 2 cups baby carrots, chopped
    1 medium onion, chopped
    3 garlic cloves, minced
    1/2 green bell pepper, chopped
    1/2 red bell pepper, chopped
    1 (28-ounce) can crushed tomatoes
    1 (6-ounce) no-salt tomato paste
    1 cup Chianti or dry red wine
    1/4 teaspoon salt
    1/4 teaspoon freshly ground pepper
    1/4 cup chopped fresh parsley
    1/4 cup chopped fresh basil
    1 (16-ounce) package cooked linguine
    Freshly grated Parmesan or Romano cheese (optional)

    Recipe



    1. Sauté first 6 ingredients in a Dutch oven over medium-high heat 5 to 10 minutes or until beef crumbles and is no longer pink; drain.
    2. Stir in crushed tomatoes and next 4 ingredients. Bring to a boil.
    3. Reduce heat, and simmer, stirring occasionally, 20 minutes.
    4. Stir in parsley and basil and cook 5 more minutes. Remove from heat.
    5. Serve over cooked linguine and top with freshly grated Parmesan or Romano cheese, if desired.


    Makes 8 servings.

    Cooking Tip: A Dutch oven is a large heavy pot, usually made of iron or earthenware, that has a close fitting lid. It can be used both on the stove top and in the oven. For this recipe, any large pot will do.
